What to do with dried scallop, goji berries, and wood ear mushrooms? Many of us remember them as staples in our family pantries, but are unsure of how to proceed with preparing medicinal soups of our own. To add clarity and context to what can be a murky understanding of the ingredients lining Chinatown’s storefronts, hua’s 2019 summer staff compiled an illustrated, annotated guide to dried goods typically sold in Chinatowns across North America.
